Hibiscus Court: A Premier Farm to Table Restaurant Experience in Jaipur
Balance is everything
Experience our farm to table restaurant where cooking is based on ancient Ayurvedic principles where balance is everything. Every dish is a mindful blend of nutrients, carefully crafted to nourish both body and soul. We embrace the philosophy of balance in every meal.
Nutrients: Each dish is a careful blend of complex carbohydrates, vitamins, proteins, and micronutrients, while ensuring easy digestion.
Spices: A thoughtful array of condiments – commonly called spices – are added gradually, through the cooking process, to enhance flavour and aid absorption.
Tastes: And every meal honours the four essential tastes: hot, sour, salty, and sweet, creating a symphony of flavours that nourish both body and soul.
Energy and Environment

The essence of good food, according to traditional Indian wisdom, begins with the freshest, purest ingredients. But it doesn’t stop there. Positive energy during cooking, a caring approach to food service, and an environment that fosters calm and connection to nature, all play crucial roles. This is at the heart of the philosophy of ayurvedic cuisine. At Savista, we embrace this philosophy wholeheartedly, and our constant endeavour as an organic food restaurant is to transform dining into a memorable farm to table experience.

Savour farm-to-fork Freshness
Nestled in the eastern part of our grounds, our restaurant the Hibiscus Court epitomizes the farm-to-table restaurant concept. Our ingredients are mostly grown organically on-site—wheat, barley, millets, lentils, beans, and oilseeds, which last are freshly pressed into cooking oil. We cultivate a substantial portion of our vegetables, including crisp salad greens. What we do not grow is sourced from neighbouring farms, ensuring that every dish is full of farm fresh foods. Our cow, fed on our chemical-free grass, provides rich milk for yogurt, butter and desserts. Even the water you enjoy is drawn from our deep borewells, ensuring that it is pure, sweet, and free from chemicals.
Organic Property
Savista is an organic property. Our crops are grown free of chemical fertilisers or pesticides. Our meadows are green with chemical-free grass. Our milk is sourced from neighbouring farmers who are free to take our grass for their cows and buffaloes. Our organic fertiliser, in addition to our own compost, comes from the cow orphanage next door, to whom we send our excess mown grass and crop residues in return for being able to buy their manure. Our herbal pesticide comes from the dried fruit of our neem trees and ash from the waste wood we burn.
Slow Cooking
Our menu is a journey through seasonal, vegetarian, and organic dishes that blend north and south Indian flavors with a touch of cosmopolitan flair. We follow a traditional slow-cooking process and ayurvedic cooking methods that highlight freshness and natural flavors while being gentle on the stomach. Our five-course pre-set menu features a mix of vegetables, grains, lentils, beans, condiments, spices, and yogurt, dessert and herbal teas. Local women, trained at Savista, prepare your meals with warmth and joy, reflecting their deep-rooted cultural values and practices.
Rustic Elegance
Our dining area, surrounded by over 80 varieties of trees, flowering shrubs, and diverse bird species, offers a unique ambience. The restaurant sits amid ancient trees and fragrant walls of hibiscus, frangipani and periwinkle, with lush gardens and open countryside stretching in every direction. Most of the year, you can enjoy al fresco dining, while during extreme weather, we offer cozy indoor settings. Dinners are illuminated by candlelight, with the warmth of braziers in the open air or fireplaces indoors during winter.
We invite you to experience our farm to table restaurant and are also happy to accommodate any dietary restrictions with advance notice.
